Open your UnrealTournament.ini file (located in your Unreal Tournament folder) with a text editor. (Simple Text, or the freeware BBEdit Lite are fine).

Very close to the top of the file is the line:
LocalMap=CityIntro.unr

Change that line to this:
LocalMap=UT-Logo-Map.unr

When you start up from this point on, you will be greeted by the Unreal Logo screen bypassing the opening movie sequence altogether.
